Isomalt is produced from sucrose as a raw material and transformed into isomaltulose by sucrose isomerase. It is commonly utilized in the manufacturing of sugar-free candy, particularly hard-boiled varieties, and can also serve as a plasticizer in high methoxyl pectin films.
